It really doesn’t get much easier than this!
Yep, these are those green leafy things you see attached to the tops of beets. You have probably normally thrown these out. But did you know that you can sauté them just like collard greens, spinach, and all those other greens?
Just add a little oil to a medium high heated pan, sauté some onions, throw in a little chopped garlic, then drop in your chopped up beet greens. Sauté them till they are nice and wilted and brimming with amazing flavor.
I like to add them to eggs for a nice omelette that will put a smile on my lady’s face.
***The best part is, you can get them for free! If you go to a Farmer’s Market, they usually rip the tops off when people buy beets. Ask the vendor for his discarded beet greens. Same goes for radishes, carrots, and other leafy green tops!
