This is a very simple to make, yet elegant frittata dish, perfect for breakfast, brunch, and, depending on what you put on it; anytime!
You will be using med. high heat, and turn on the broiler. Make sure you are using an oven safe pan!
First, saute some sliced onions, in butter or oil, til they are soft, or you can go all the way and caramelize them.
Once they are ready, remove them, then add your mushrooms and saute a few minutes til they are cooked to tasty goodness.
Next up, add some oil or butter to the pan. Then add your already beaten eggs to the pan. You can move the eggs around so as to let them firm up on the bottom, but don’t let it set up on the top.
Then add your onions, mushrooms, (you can add cheese, tomatoes, pork rinds, camel hump, and whatever else ya like!) on top like pizza toppings.
Pop the pan under the broiler for a few minutes til nice, fluffy, and browned a bit.
Cut it up and serve immediately!
