tortilla (corn or flour)
2 eggs, beaten
First, grill the tortillas for a bit to just lightly brown them and add some texture and flavor. I do it directly over the flame. You can do it in a dry hot pan.
Sauté the onions for a few minutes, then add tomatoes and sauté til soft.
Then add the eggs and scramble it all up.
Top with some warmed up salsa and fresh avocado chunks.
