A Tuna...Omelette? Yep!

I know, I know, it sounds weird, but it is actually very tasty and easy to make. I walk you through the simple steps to get a heart healthy breakfast on full of da flavaaaaa!!!

Here’s the How-to Tuna Omelette

What You'll Need:

How to Make It

  1. Put a little of the olive oil from the tuna into a med-high heat nonstick pan.
  2. Add onions, and a little salt, sauté for a few minutes
  3. Add tomatoes and garlic, sauté for a few minutes
  4. Add tuna and warm up for a minute. Then remove to a plate.
  5. Add eggs to the pan. Allow them to set for abut 30 seconds before you pull the sides toward the middle allowing the runny eggs to cook.
  6. Once the omelette starts to firm up on top, add the onion tomato mixture.
  7. Grate Parmesan cheese on top.
  8. Fold the omelette over and serve.

Eat that bad boy!

Poached Eggs on Sautéed Greens and Cannelini Bean Puree

Not only is this a great tasting and beautiful dish to serve to a lovely lady in the morning, but it’s also on the Slow Carb diet that is so popular these days.

That means that it has no flour, sugar, or dairy. It is also nut free, so you have lots of coverage in the safe arena for this one. It might even be Paleo happy, but I’m not into that one. You decide.

This is a very simple recipe and you can make the bean puree well ahead of time and use it in tons of tasty dishes, including to thicken soups, or as a dip for crudités. It adds your Slow Carb bean component to almost anything you can imagine. Enjoy!

What You'll Need:

Put the beans, garlic, and lemon in a blender.  Blend. As you blend, slowly drizzle olive oil in until you reach your desired consistency. Add S&P.

What You'll Need:

Sauté onions in oil for a minute, then add the garlic, then the greens. Sauté till wilted. Add S&P.

Poached Eggs

Here’s the trick to making great poached eggs…Vinegar! And having the eggs pre-cracked in separate bowls.

Bring a pot of water to a simmering boil (small bubbles everywhere, but not rolling).

Add a teaspoon or so of vinegar to the water. This helps the eggs coagulate quickly.

Drop eggs in one at a time, gently, in a clockwise manner. After about 2-3 minutes, they should be set and ready to go.

Turn of the heat and remove eggs. Start with the first egg you put in and work clockwise. Drain with a paper towel to remove excess water.

 

Mexi Breakfast Scramble

It's morning. You've just had a fantastic date last night that turned into an even better date this morning. Now it's time to impress her again. So you're going to go South of the Border...again.

What You'll Need:

  • Tortilla (corn or flour)
  • Onions, chopped
  • Tomato, chopped
  • 2 eggs, beaten
  • Avocado
  • Salsa

How Ya Make It:

First, grill the tortillas for a bit to just lightly brown them and add some texture and flavor. I do it directly over the flame. You can do it in a dry hot pan.

Sauté the onions for a few minutes, then add tomatoes and sauté til soft.

Then add the eggs and scramble it all up.

Top with some warmed up salsa and fresh avocado chunks.

Okonomiyaki-(ish)

Get ready to add some Japanese flair to your mornings with my twist on Okonomiyaki!

What You'll Need:

Start by adding the Hon Daishi, soy sauce, white pepper, and sugar to the eggs and beat them.

Meanwhile add the oil, cabbage, onion, and garlic to a sauté pan over med high heat. Sauté till the cabbage is wilted and slightly starting to brown.

Then add the eggs to the pan.

As the eggs cook, flip the omelette over until the eggs have cooked through and serve.

It Only Takes 3 Minutes

Okay, it really doesn’t get much easier here. This is the perfect breakfast for even the worst of cooks. And, you get to add a European flair to your breakfast...making you look extra special in your lady's sleepy morning eyes! What am I talking about? 

3-Minute Eggs

Skills required: being able to boil water, hold eggs carefully, use a salt and pepper shaker somewhat effectively.

How to Make Them:

Bring a pot of water to a rolling boil.

Slowly insert 4 eggs (or just 2, if you are sad and lonely this morning) into the water.

Start a timer for 3 minutes.

While the eggs are cooking, cook up a few pieces of toast. Then cut them into “dipping strips,” sometimes called “Eggy Soldiers.”

When the timer goes off, take the eggs out, place into cups, smack ‘em on top with a spoon, and take away the tops.

Sprinkle some salt and pepper atop, dip your toast in, and enjoy the golden goodness!

Allergy Info:

Check if your date happens to be gluten-intolerant or have celiac disease before. If so, just use gluten-free bread. 

Bacon and Egg "Cupcakes"

Did your date go so well, you need to cook her breakfast?

Here's an easy-peasy recipe that will definitely impress and nearly guarantee an, "Oh that's so cute" response.

NOTE: Do not use this recipe if you are dating someone who is a Vegan or Vegetarian. They will not be pleased.

How to Make Bacon and Egg "Cupcakes":

Oven 350, bake your bacon on a baking sheet till it’s done how you like it, but still pliable.

Then wrap one rasher around the inside of a cupcake tin.

Crack an egg into the middle of the bacon.

Bake for about 12 mins or so.

Voila! A lovely brekky for your lovely lady!
